Isle Of Raasay the Draam

THE DRAAM comes from Isle of Raasay, the island distillery off Skye in the Inner Hebrides, and it is a Scotch whisky. The brief gives no age, cask type, peat level or ABV, so check the label for those. Island and coastal Scotch like this often brings a malty, cereal backbone with some salinity, sometimes a thread of smoke, and oak-driven vanilla and baking spice. Treat those as a guide to what to look for, not as a measured profile of this bottle. Pour a small measure into a Glencairn first. The tapered bowl concentrates the aroma, so you can tell whether the nose leans toward grain and honeyed malt, sea air, orchard fruit or smoke before you taste. Taste it neat at room temperature, then add a few drops of room-temperature water. A little dilution tends to loosen tight, spirity edges and bring out the softer fruit and cereal notes. Ice will mute much of the nose and numb the finish, so if you want it cold, use a single large cube in a rocks glass and sip slowly so it doesn't dilute too fast. For mixing, a whisky with island character suits drinks that let it show. A Rob Roy, which is a Manhattan made with Scotch, works well with sweet vermouth and a dash of aromatic bitters. A Scotch Old Fashioned with a bar spoon of demerara syrup and orange peel also holds up. If the bottle turns out to be smoky, a Penicillin-style sour will make the most of it. For a long drink, a Highball with cold soda water over plenty of ice and a lemon twist keeps the malt and any coastal notes easy to follow. Food pairings follow the same logic. Smoked salmon, oysters, mature cheddar and dark chocolate are the usual matches for Hebridean-style Scotch.
