Description
Glenallachie 18 Year is a Speyside single malt bottled at 46% ABV, and the reference details point to a sherry-led profile. The whisky is matured in a mix of Pedro Ximénez sherry, oloroso sherry and virgin oak casks. The stated style is rich and sherried, with dried fruit, toffee, orange and warm spice. It is also non-chill filtered and carries natural colour, so the whisky is bottled without the filtering that can strip some texture from a malt at this strength. Each cask type should contribute something different. Pedro Ximénez is a sweet sherry, and casks that held it usually add raisin, fig and dark-sugar sweetness. Oloroso casks tend to add nuttier, drier notes, with walnut and cocoa. Virgin oak adds vanilla and a firmer structure, and its tannins keep the sweetness from turning syrupy. With this mix, expect a nose of orange peel, toffee and dried fruit, and a palate where the baking spice builds through the middle and carries into the finish. This is not a peated or smoky malt, so look for oak and spice rather than smoke. Serve it neat first. At 46% it has enough weight to hold its character without water, and a Glencairn glass will concentrate the dried fruit and orange on the nose. If the spice feels sharp, add a few drops of room-temperature water, which usually opens up the sweeter fruit and softens the alcohol. A rocks glass suits slower sipping, but ice mutes the aroma and numbs the sweetness, so use one large cube if you want it cold, and not a handful of small ones that will dilute it quickly. Mixing is possible, though an 18 year old malt makes an expensive base for most cocktails. If you do, an Old Fashioned or a Manhattan suits the sherried style best. The dried fruit and toffee already sit close to the sweet vermouth, bitters and orange peel in those drinks, so a light hand with the sweetener is enough. A Whiskey Sour or a Highball would bury what you paid for, so a younger whisky is the better choice for either. For food, dark chocolate, roasted nuts, aged hard cheese and fruitcake echo the sherry cask character without competing with it.
