Twomey Sauvignon Blanc

Twomey Sauvignon Blanc is a dry California white from Twomey Cellars, a house related to Silver Oak Cellars. Expect the profile the grape is known for: bright citrus and tropical fruit on the nose and palate, with lemon, lime and grapefruit-type notes alongside passion fruit or pineapple. Acidity is crisp and drives the wine. Sauvignon Blanc in this style is usually light to medium in body, has no meaningful tannin, and tends to finish clean and fairly quick. Oak is not a defining feature of the grape, and the details we have don't point to a heavy wood influence, so think fruit and freshness rather than richness or vanilla. That acidity is the key to pairing. It cuts through oil and fat, so it suits fried calamari, fish and chips, and goat cheese on a salad or in a warm tart. It also works with shellfish such as oysters, shrimp and scallops, and with grilled white fish dressed with lemon. Herb-forward dishes are a natural match: pesto pasta, chicken with tarragon or parsley, and green vegetables such as asparagus, snap peas and zucchini. These are often hard to pair with wine. Fresh tomato dishes and light Thai or Vietnamese food with lime and herbs also fit. Very sweet sauces or heavy red-meat dishes will overpower it. Serve it well chilled, around 45 to 50°F (7 to 10°C). That is about three hours in the refrigerator, or 30 minutes in an ice bucket. Colder than that mutes the fruit, and warmer makes the acidity feel sharp and loose. Decanting isn't needed. Pouring straight from the bottle keeps the aromatics lively. A standard white wine glass with a moderate bowl and a slightly narrower rim is ideal, since it concentrates the citrus and tropical aromas without letting them fade. Fill it only a third full so the wine stays cool as you drink. This is a drink-now bottle. Wines of this type are made for freshness, and the fruit and acidity are at their best in the first few years after release. There's little reason to cellar it. Open it young, keep it cold, and finish an opened bottle within a few days with the cork or screwcap back on and the bottle in the fridge.
