Apothic Original Red Blend

Apothic Red Blend is a California red from the Apothic label. It's bottled at 13.5% alcohol, which is moderate for the style. The producer describes it as soft and fruit-forward, built around dark cherry and blackberry with a baked-fruit richness. Vanilla and mocha notes finish it, and there's a slight touch of sweetness on the palate. Wines in this style usually have gentle tannins and low bitterness, so it's easy to drink without food and doesn't need cellaring or decanting. The sweetness is mild, not dessert-level. It reads as ripe fruit more than sugar, and it rounds off the oak-driven vanilla and mocha tones. If you usually prefer dry, structured reds like Cabernet or Bordeaux-style blends, expect something plusher and less austere. If you like Zinfandel, Merlot or other fruit-led California bottlings, this should feel familiar. Serve it just below room temperature, around 60 to 65°F. About 20 minutes in the refrigerator before opening takes the edge off a warm bottle and keeps the fruit from tasting heavy. A standard red wine glass with a wide bowl is enough to open up the aromas. Pour about a third of the glass so there's room to swirl. At the table, the soft tannins and ripe fruit suit foods with some char, smoke or sweetness. Good matches include burgers, barbecued ribs or pulled pork, pepperoni or sausage pizza, baked pasta with tomato sauce, and meatloaf. The slight sweetness also works against spicy rubs and glazes. For cheese, choose medium-aged cheddar, gouda or smoked provolone over anything sharp or pungent. Once opened, recork it and keep it in a cool place. It's best within a few days while the fruit is still bright.
