Description
Discover the bold essence of Pacifico Sur Merlot, hailing from Chile’s renowned San Antonio Valley in the Central Valley region. This Merlot exemplifies the classic characteristics of the grape, offering a full-bodied experience with a balance of gentle tannins and a lively acidity. Expect hints of ripe dark fruits like black cherry and plum, interwoven with subtle herbal undertones that lend a distinctive “green” note typical of Chilean Merlot. The wine's moderate 13.5% ABV ensures that its flavor complexities take center stage rather than being overshadowed by alcohol. Whether enjoyed immediately or allowed to mature for a few years, this Merlot promises a rewarding experience. While it can be savored straight from the bottle, decanting for about 30 minutes prior to serving can further enhance its aromatic profile. Serve at a temperature of roughly 60°F (15°C) to fully appreciate its depth of flavor. The ideal glassware for this wine is a classic red wine glass, which will help concentrate its aromatic qualities. A versatile companion to a variety of dishes, Pacifico Sur Merlot pairs beautifully with robust, savory flavors. It complements the richness of a hearty Italian feast, making it a perfect match for pasta in red sauce, meatballs, or even a slice of gooey pizza. Its acidity and fruit-forward nature also harmonize well with roasted turkey, providing a delightful contrast to the meat’s savory notes. This Merlot’s ability to stand up to bold flavors ensures that each sip remains as enjoyable as the last. Pacifico Sur Merlot is a testament to Chile's impressive winemaking heritage, blending tradition with the region's unique terroir to deliver a wine that is both accessible and complex. Whether you're exploring new varietals or revisiting a classic favorite, this Merlot promises a satisfying and authentic Chilean wine experience.

Took me three nights to finish this bottle, sipped with pizza one day and some leftover roast chicken another. Good enough that I never forgot it was open. Maybe just a touch on the earthy side.

Had Pacifico Sur Merlot at a friend's and actually came back to pick up my own. Holds up, but feels a bit sharp if you let it sit out too long. Still, nice for weekday pasta nights.
