Old Soul Cabernet Sauvignon

Old Soul Cabernet Sauvignon from California presents a robust and intricate character, capturing the essence of its mature vines. Expect the concentrated flavors typical of this red wine category, with dark fruit notes like blackberry and cassis taking center stage. The wine's body is full, with firm tannins that lend structure and balance, paired with moderate acidity that keeps it lively. A subtle oak influence weaves through the profile, contributing hints of vanilla and spice that linger softly on the palate, culminating in a smooth, enduring finish. When it comes to food pairings, this Cabernet Sauvignon's depth and complexity make it an excellent companion to hearty dishes. Consider serving it alongside a grilled steak, roasted lamb, or a rich mushroom risotto to complement its bold flavors. For a more casual pairing, a blue cheese burger or a selection of aged cheeses would also harmonize beautifully. For optimal enjoyment, serve Old Soul Cabernet Sauvignon at a temperature of around 60-65°F. This wine benefits from a short period of decanting, about 30 minutes, to allow its aromas and flavors to fully open up. Choose a large, wide-bowled glass to appreciate its aromatic complexity and to encourage ample oxygen exposure. While this is a drink-now bottle, its structure suggests it could evolve gracefully over the next few years, rewarding those with a bit of patience.
