Boulard VSOP Calvados

Boulard VSOP Calvados is an apple brandy from the Pays d'Auge in Normandy, bottled at 40% ABV. The VSOP designation means the blend has spent at least four years in oak, and the Pays d'Auge appellation points to a double-distilled style, typically done in pot stills. That usually gives a more aromatic, layered spirit than calvados from the broader Normandy appellation. Expect baked apple at the centre, with vanilla and light spice from the cask. The palate is smooth and rounded rather than sharp or tannic. Compared with a cognac VSOP, calvados tends to lead with orchard fruit instead of grape. You can expect a rustic apple-skin note under the oak, and a slightly earthy, cider-like backbone. At four years the wood is present but not dominant, so the fruit remains the main character. For sipping neat, a tulip-shaped glass or a small snifter suits it. Serve it at cool room temperature, around 16 to 18°C. Cooler than that and the apple aromatics are muted. Warming the glass in your hands for a minute opens up the vanilla and spice. A few drops of water can soften the alcohol if you find it hot. It also works well as a digestif after a meal, with a sharp cheese like Camembert or Livarot, or with a tarte Tatin or baked apples. In cocktails, it substitutes naturally for cognac or applejack. It fits a Sidecar, where the apple adds a fresher, less grapey tone against the lemon and orange liqueur. It also suits a Sazerac, where its fruit stands up to the bitters and absinthe rinse. In a Brandy Alexander, the vanilla and baked-apple notes pair well with crème de cacao and cream. For a simple highball, pour over ice and top with ginger beer or tonic, adding a wedge of lemon or a thin apple slice.
