Hibiki Harmony Momoyama

Hibiki Harmony is a Japanese blended whisky from Suntory's Hibiki line, and the "Momoyama" in the name is a nod to the Momoyama period of Japanese history, which is known for its gilded art and screens. A blend like this combines malt and grain whiskies from different distilleries and cask types, so expect a soft, rounded profile instead of the sharp edges of a young single malt. Styles like this usually show floral and honeyed top notes, light vanilla, a touch of orchard fruit, and a gentle oak finish with only a faint trace of spice. Because the balance is the point, neat is the best first pour. Give it a few minutes in the glass at room temperature, then add a few drops of water if the nose feels tight. Water usually opens up the softer floral and grain-sweet notes in a blend like this, while too much chill can mute them. Ice is fine if you prefer it, but use one large cube so it melts slowly and doesn't flatten the flavors quickly. For glassware, a Glencairn or similar tulip-shaped glass concentrates the aromas and suits the first few sips when you're working out what the blend is doing. A rocks glass is the better choice for a relaxed pour with a large cube, or for building a drink. In cocktails, a delicate Japanese blend rewards simple recipes. A Japanese-style highball, with chilled soda water, plenty of ice and a lemon peel, shows off its lightness better than almost any other mix. An Old Fashioned with a small measure of sugar and a dash or two of bitters works well if you keep the dilution and sweetness restrained. Heavy, bitter vermouths in a Manhattan or strong citrus in a Whiskey Sour can overwhelm the quieter character, so if you make those, keep the other ingredients in proportion. For food, expect it to sit comfortably alongside sushi and sashimi, tempura, grilled chicken or lightly salted nuts, where its restraint complements the dish instead of competing with it.
