Description

Austin Hope's Cabernet Sauvignon from Paso Robles offers an enticing expression of one of California's most revered grape varietals. A product of the sunny hillsides of California, this wine exudes the full-bodied character typical of the region's renowned Cabernets. Expect a deep garnet hue in the glass, where aromas of ripe blackberry, blueberry, and a touch of mocha invite you to explore further. As you sip, the palate reveals a symphony of dark fruit flavors, underscored by hints of cedar and a whisper of earthy tones, creating a well-rounded and complex experience. This wine's structured tannins and balanced acidity make it a versatile companion for hearty dishes. Pair it with a porterhouse steak to complement the robust meat flavors, or enjoy it alongside braised pork belly for a rich, indulgent meal. The wine's fruit-forward nature also stands up well to grilled portobello mushrooms and savory lamb stews, offering a harmonious balance between the wine and the dish. For optimal enjoyment, serve Austin Hope's Cabernet Sauvignon at a temperature between 60°F and 65°F. Decanting is recommended, allowing the wine to breathe and fully open up, enhancing its nuanced bouquet and depth. Use a large, tulip-shaped glass to truly savor the aromas and flavors this wine has to offer. While this Cabernet Sauvignon is delightful to drink now, its firm structure and depth of flavor suggest it could also benefit from some time in the cellar, offering even greater complexity with age. Whether you're exploring it now or setting it aside for future enjoyment, this wine promises to be a rewarding experience for those who appreciate the robust elegance of California Cabernet.

Birthday dinner with ribeyes and friends. Brought out the Austin Hope Cab, everybody loved it. Always feels like a special occasion when this bottle is on the table. Finishes smooth but still packs that Paso punch.
