Robert Mondavi Bourbon Barrel Cabernet Sauvignon

Robert Mondavi's Bourbon Barrel Cabernet Sauvignon comes from the Private Selection line. It is a California red, 13.5% ABV, with part of its aging influenced by bourbon barrels. That oak treatment sets it apart from a standard Cabernet. Bourbon barrels are charred American oak, and wine matured in them usually shows more vanilla, toast and sweet-spice character than wine aged in other oak. The profile here is dark fruit, vanilla and toasty oak, and the structure is typical of Cabernet Sauvignon: firm, full-bodied and built around dark berry flavor. Expect black cherry, blackberry and cassis on the palate, with the oak adding a vanilla-and-toast layer, possibly a faint caramel edge. At 13.5% alcohol it should come across as rich without being heavy. The grape's tannins give it grip, and the barrel notes soften the finish. For serving, a Cabernet or Bordeaux-style glass with a wide bowl suits it. Serve it slightly below room temperature, around 60 to 65°F. Much warmer and the oak and alcohol can dominate. Cooler and the fruit goes quiet. Pouring it 20 to 30 minutes before drinking, or decanting briefly, helps the aromas open and relaxes the tannins. At the table, the vanilla and toast notes pair well with grilled or smoked meats. Think ribeye, burgers, barbecue brisket or ribs, where char and a little sweetness in the sauce echo the barrel character. It also stands up to aged cheddar, mushroom dishes and roasted lamb. Lighter fish and delicate salads would be overwhelmed by the oak and tannin.
