Schneider Weisse Aventinus

Schneider Weisse Aventinus is a wheat doppelbock, or weizenbock, from Bavaria, brewed at 8.2% ABV with a restrained 16 IBU. That low bitterness is the key to how it drinks: the hops stay in the background, so the beer's character comes from yeast and malt rather than hop bite. The reference history for the brand dates this beer to 1907 and describes it as the first wheat doppelbock. It is top-fermented and bottle-conditioned in the Bavarian tradition. In the glass, expect a deep mahogany body under a creamy tan head. The top-fermenting weizen yeast typically contributes banana and clove, and here those sit alongside darker, maltier notes of plum, raisin and dark fruit, with a hint of chocolate. The body is full and smooth, with a gentle warmth at the finish from the 8.2% alcohol. Because the bitterness is so low, the sweetness of the dark malt is balanced mainly by carbonation and a faint spiciness rather than by hops. Serve it cool but not ice cold, around 8 to 10°C, so the fruit and clove aromas can open up. Straight from the refrigerator it will taste muted. A tall, curved weissbier glass is the right choice, since its narrow base and flared top hold the dense head and concentrate the aroma. Pour slowly, leave the last finger of liquid and the yeast sediment in the bottle, then swirl it and add it to the glass if you want the fuller, cloudier texture. At the table, it suits roast pork, duck and venison, where its malt sweetness matches the caramelized flavors of the meat. It also works with sausages and dark mustard, mushroom dishes, and aged Gouda or other nutty hard cheeses. For dessert, try it with gingerbread, baked apples or dark chocolate, or on its own after a meal. Its strength and richness make it better suited to sipping than to drinking in volume.
