Siete Leguas Anejo Tequila

Siete Leguas Añejo is a 100% blue Weber agave tequila from Jalisco, bottled at 40% ABV and made by the Álvarez family at the Tequila distillery. It spends at least a year in oak barrels, which puts it in the añejo category: a step beyond reposado, which rests only a couple of months to a year, and well short of extra añejo, which needs three years or more in wood. That middle position is where the spirit keeps a recognizable agave identity while picking up the rounded, baked-sweet character oak provides. Expect cooked agave to lead, with vanilla, caramel and a touch of light spice following. That is the profile typical of a traditionally made añejo, and it matches the producer's own description of a smooth, balanced finish. Compared with a blanco, which shows the raw, peppery, citrus-and-green-herb side of the plant, an añejo like this trades some of that brightness for softness and depth. The barrel does the work of smoothing edges and adding toasted sweetness without burying the agave underneath. This is a bottle suited to sipping neat. Pour it into a caballito or a small tulip-shaped tasting glass, which concentrates the aroma, or into a rocks glass with a single large cube if you prefer it slightly cooled and slower to open up. Serve it at room temperature or lightly chilled rather than ice-cold, since too much cold mutes the vanilla and caramel. Orange slices alongside work better than salt here, and the spirit pairs well with dark chocolate, roasted nuts or aged cheese. In cocktails, an añejo this considered is better reserved for drinks that let the barrel show. An Old Fashioned built with agave syrup and a dash of bitters, or a spirit-forward stirred drink, will make better use of the oak than a Paloma or Ranch Water, which are better served by a blanco's sharper edge. A Margarita is workable if you want a richer, rounder version, though the spirit's depth is easier to appreciate when it is not competing with a lot of citrus and soda.
