Ron Medellin 8 Year Rum

Ron Medellín 8 Year is an aged Colombian rum from Medellín in the department of Antioquia, produced by Fábrica de Licores de Antioquia and bottled at 40% ABV. The label carries an eight-year age statement. Rums in this style usually show a deep amber color, with aromas of caramel, toasted oak, dried fruit and baking spice, and a smooth, medium-weight palate that finishes on vanilla and light wood. Those are typical expectations for a Latin-style aged rum of this age, not a measured profile of this bottle. Its age and 40% strength put it in sipping territory first. Pour 45 to 60 ml neat into a Glencairn or tulip-shaped nosing glass, or over one large ice cube in a rocks glass, and let it sit a minute so the oak and sweet notes open up. A few drops of room-temperature water can soften the alcohol if you want to pick out the finer aromas. Served this way, it pairs naturally with dark chocolate, roasted nuts, aged cheeses and dried fruit, and it suits a slow after-dinner pour. The cocktail where it works best is the Rum Old Fashioned. Stir 60 ml with a teaspoon of demerara syrup and two dashes of aromatic bitters over ice, strain over a large cube in a rocks glass, and express an orange peel over the top. The sugar and bitters complement the barrel character without covering it. A Dark 'n' Stormy is a looser option: use it in place of a standard dark rum, with ginger beer and fresh lime, in a highball over ice. It will taste rounder than the usual version, though it is a better fit for a bottle you are already enjoying than for one you want to save. White rum cocktails are where you would more likely reach for another bottle. A Daiquiri, Mojito or Piña Colada relies on a lighter, cleaner base, and the aged oak notes here would be partly lost behind lime, mint or coconut cream. If you do want an aged-rum Daiquiri, keep the proportions simple at 60 ml rum, 22 ml lime juice and 15 ml simple syrup, shaken hard and served up in a chilled coupe.
