Description
El Dorado 21 Year Old Special Reserve is a Demerara rum from Guyana, bottled at 43% ABV and produced by Demerara Distillers Limited. It is a blend of rums from different still types, including traditional wooden stills and column stills, aged in oak for a minimum of 21 years. The wooden-still component is what gives Demerara rum its reputation for weight and depth, and the blend of both still types is what keeps that weight from becoming heavy. In the glass, expect the profile the distiller describes: dark sugar, dried fruit, baking spice and oak. Rums that spend two decades in barrel typically show a deep amber to mahogany color and an aroma built around molasses, raisin, and toasted wood. On the palate, expect a rounded, viscous texture with the sweetness balanced by oak tannin and a long, warm finish. Dark sugar and dried fruit tend to lead, while the spice and wood come through later and linger. This is a sipping rum, and mixing it would waste most of what the age has built. Pour it neat at room temperature into a tulip-shaped glass or a small snifter, which concentrates the aroma and lets the spice and fruit open up. A tumbler works if you prefer a wider glass. If it feels tight at first, a few drops of room-temperature water can loosen the aromas, and a single large ice cube is acceptable if you like it cooler, though chilling will mute some of the sweetness and spice. Avoid crushed ice and avoid shaking it. The one cocktail that makes sense here is a Rum Old Fashioned, built simply with a barspoon of demerara syrup, two dashes of aromatic bitters and an orange peel, stirred over a large cube. Keep the sugar minimal so the rum stays at the center. Daiquiris, Mojitos, Piña Coladas and Dark 'n' Stormys all rely on lime, mint, coconut or ginger beer to carry the drink, and those flavors would cover what makes a 21-year-old blend worth buying. For food, dark chocolate, roasted nuts, dried figs or dates, and aged hard cheeses suit the rum's sweetness and spice, and a cigar is a traditional match for those who enjoy one.
