Description
Sempe Vieil's 15 Year Armagnac comes from Gascony in southwestern France, and the reference to the Sempé house places it in Bas-Armagnac, the western sub-region whose sandy soils are generally associated with rounder, fruit-forward spirits. The fifteen-year age statement means the youngest eau-de-vie in the blend has spent at least that long in oak, which is well past the VSOP and XO minimums used for cognac and Armagnac. At this age, expect the spirit to lean away from fresh grape and toward dried fruit, vanilla and baking spice, with the mellow, rounded texture the house describes and a long, warming finish. Armagnac of this kind is made for sipping. Pour a modest measure into a tulip-shaped glass or a small snifter and let it sit for a minute or two before the first sip. Serve it at cool room temperature, roughly 16 to 20°C, and avoid ice and chilling, which mute the aromatics. Armagnac is usually distilled once in a column still, which often gives it a more rustic, characterful edge than cognac, so a few drops of room-temperature water can open up the dried fruit and oak spice if the spirit feels tight. In a glass, it pairs naturally with dark chocolate, roasted walnuts, a slice of prune or apricot tart, or a mature hard cheese such as Comté or aged Gouda. A square of chocolate with at least 70 percent cocoa makes a straightforward match for the vanilla and spice. It also suits the end of a meal alongside coffee. Cocktails are possible, but a fifteen-year bottling is a poor use of money in a Sidecar or Brandy Alexander, where lemon juice or cream will cover most of what the age has built. If you do want to mix with it, a spirit-forward drink is the better choice: a Sazerac made with Armagnac in place of rye or cognac, or a simple stirred drink with a sugar cube and bitters. These keep the oak and fruit audible. For sours and creamy drinks, a younger VS or VSOP Armagnac or cognac is the more practical option.
