What is Don Julio, and how is it made?

Don Julio is a tequila brand from Jalisco, Mexico, named for Don Julio González, who began making tequila in 1942. Like all tequila, it is distilled from the blue Weber agave plant. The agave hearts are cooked, crushed, fermented and distilled, and the spirit is then either bottled young or rested in oak.

That resting time is what separates one bottle from the next. A tequila labeled 100 percent agave is made only from agave sugars, with nothing else added to the fermentation. Everything else about the bottle, from its colour to its flavour, comes down to how long it sat in wood and what kind of wood it was.

That is why a single brand can make a pale, peppery spirit and a deep amber, vanilla-led one. The difference is mostly time.

What is the difference between blanco, reposado and añejo?

Blanco is unaged or aged only briefly, so it tastes closest to the plant: bright, peppery, citrusy and a little vegetal. It is the style most people reach for in a margarita or a paloma, and the one to try if you want to taste the agave itself. You can browse more of it in blanco tequila.

Reposado means rested. By Mexican rules it spends at least two months and less than a year in oak. The wood softens the edges and adds light vanilla, caramel and spice while the agave character stays in front. More are gathered under reposado tequila.

Añejo means aged. It rests at least a year in oak, up to three years, and tastes rounder and richer, with notes of toasted oak, dried fruit and baking spice. Because it is made for slow drinking, many people pour it neat rather than mix it.

What makes Don Julio 1942 and 70 Añejo Claro different?

DON JULIO 1942 takes its name from the year Don Julio González started making tequila. It sits at the long-aged end of the brand's range, and it is the bottle people tend to choose when they are buying a gift or marking an occasion rather than stocking the home bar.

DON JULIO 70 Anejo Claro is an añejo that has been filtered to remove the colour that oak gives it. Claro means clear. The result is a tequila that has the rounded, oaky depth of an añejo while looking like a blanco in the glass. It suits someone who wants the smoother feel of aged tequila without the amber colour, including in cocktails where a clear drink matters.

The DON JULIO Anejo Tequila 80 Proof is the straightforward añejo of the group. The 80 proof means 40 percent alcohol by volume, the same strength as most bottled tequila.

How should you drink Don Julio?

Blanco belongs in cocktails where the agave should come through. A margarita with fresh lime, a paloma with grapefruit soda, or a simple tequila and soda with a squeeze of lime all let the spirit show. Chill the glass first and keep the garnish simple.

Reposado works in both worlds. It makes a softer margarita and holds up in an old fashioned-style drink with a little agave syrup and bitters. It is also easy to sip over one large cube of ice.

Añejo, 1942 and 70 Añejo Claro are best given room to breathe. Pour a measure into a small glass, serve neat or over a single cube, and take your time. Drink responsibly, and only if you are 21 or older.

Which Don Julio bottle suits which occasion?

For margaritas at a backyard gathering, start with the Blanco. It is made for mixing and does not need to be saved for sipping. If you are not sure whether guests will want something straightforward or something a bit richer, add a Reposado and let people choose.

For a dinner or a gift, move toward the Añejo or 1942. Aged tequila pairs well with grilled meats, aged cheeses and dark chocolate, and it gives the recipient something to savour slowly.

If you are hosting a larger party, the party planner can help you work out quantities across spirits, beer and mixers so you are not guessing the night before.

What else do you need to go with it?

A bottle of tequila is only part of a drink. For margaritas and palomas you will want citrus and soda, and the mixers section covers the supporting pieces so you can leave in one trip.

If you want to compare Don Julio with other bottles on the shelf, the full tequila category is the place to browse. It sits within the wider liquor department, which also covers rum, vodka, gin and whiskey for a mixed bar.

For non-spirit options at the same gathering, the shop also stocks beer and wine.
