Description

Smith & Cross Traditional Jamaica Rum is a navy-strength pot still rum from Jamaica, bottled at 57% ABV. It blends Plummer-style and Wedderburn-style rums, two Jamaican traditions known for heavy ester content, and Hampden Estate is among the sources. The style is unaged-to-lightly-aged in character rather than sweet or spiced, and it is built around "hogo," the funky, high-ester aroma that Jamaican pot still rums are known for. Expect ripe tropical fruit, such as overripe banana and pineapple, with molasses, a briny or olive-like savory edge, and some solvent-like sharpness. Styles like this usually finish long and dry, with the strength carrying the flavor rather than sweetness. At 57%, this is a rum you can sip, but it is a poor fit for a casual neat pour. If you want to try it straight, use a small tulip or Glencairn glass, pour a measure of about 30 ml, and add a few drops of water or a single ice cube to open the aroma and take the alcohol heat down. Most of its value is in mixing, where the proof means the rum keeps its character through ice, citrus, and syrup instead of getting washed out. Because it is so concentrated, many bartenders use it in smaller amounts than a standard 40% rum, or split the base with a milder rum. In cocktails, it earns its place in tiki and classic sour recipes. A Daiquiri made with it, or with it as part of the base, gets a savory, tropical depth that a plain white rum lacks. Serve it in a chilled coupe with fresh lime and a measured amount of sugar syrup. In a Dark 'n' Stormy, a measure over ginger beer and lime in a highball glass gives a sharper, more fragrant version than the usual dark rum. It also works well in a Mojito if you use a little less than the recipe calls for, and it is a common choice in a Piña Colada or other blended tropical drinks, where a half-measure alongside a softer rum adds fruit and funk without taking over. For a Rum Old Fashioned, stir it over a large cube in a rocks glass with a small amount of demerara syrup and bitters, and expect a bolder, more savory drink than a bourbon version. For food, the briny, fruity profile suits grilled pineapple, jerk-seasoned meats, and salty cured pork. Store the bottle upright at room temperature, away from direct light.
