Finback Stick Around

Stick Around is an American IPA from Finback, a New York brewery. The label gives no ABV or IBU figure, so this is a guide to the style and what to expect from it, not a measured profile. American IPAs of this type are built on American hop varieties, with citrus peel, grapefruit, pine resin, and sometimes stone fruit or tropical notes in the aroma. Expect a bitterness that is firm but not harsh, set against a pale malt backbone that stays in the background. Most examples finish fairly dry and crisp, and the hop character lingers after the swallow. Serve it cold but not ice-cold, ideally around 45 to 50°F (7 to 10°C). Straight from the coldest part of the fridge, the hop aromatics are muted and the bitterness reads sharper. Let the can or bottle sit out for five to ten minutes and the citrus and resin come forward. Freshness matters more with this style than almost any other, because hop aroma fades over weeks. Check the packaging for a canned-on or best-by date and drink it while the hops are still lively. For glassware, a tulip or a shaped IPA glass is the best choice. The narrowing top holds the volatile hop aromas near your nose, and the flared lip supports the head. A standard pint glass works fine, and a wide-mouthed snifter is a reasonable substitute. Pour it down the side of the tilted glass, then straighten it to build a modest head. If any yeast or haze settles at the bottom, you can choose whether to include it. IPAs like this suit food with some richness or heat. The bitterness cuts through the fat in a smash burger, fried chicken, or loaded nachos. The citrusy hop notes pair well with spiced dishes such as Thai curries, jerk chicken, and carnitas tacos, where the carbonation also helps with chili heat. Sharp cheddar and washed-rind cheeses stand up to the hops, and carrot cake gives a good sweet contrast. Delicate fish and mild, creamy sauces tend to get overwhelmed, so save the IPA for bolder plates.
