Tilted Barn Sea of Stars

Sea of Stars is an imperial IPA from Tilted Barn in Rhode Island. The category tells you what to expect, though the label details here don't give an ABV or IBU. Imperial IPAs usually land in the 8 to 10 percent ABV range, with a bigger malt backbone than a standard IPA to hold up the hop load. In this style the hops tend to read as resinous pine and grapefruit pith, or as ripe stone fruit and tropical notes such as mango, passion fruit and melon. The latter is common in New England-leaning versions, which are softer and hazier. Expect noticeable bitterness, though well-made examples keep it rounded rather than harsh. A trace of residual sweetness and a warming finish are normal for the strength. Serve it cold but not frozen, around 7 to 10°C (45 to 50°F). Straight from a refrigerator at 3°C the hop aroma stays muted and the bitterness feels sharper, while a few degrees of warming lets the fruit and resin come forward. If the can or bottle has been in a very cold fridge, give it ten minutes on the counter before pouring. A tulip or snifter-style IPA glass is the best choice. The narrowing top traps the hop volatiles and the bowl leaves room for the head to build. A standard shaker pint or a tapered IPA glass is fine if you don't have one. Pour with some force to raise a head, since the foam releases the aromatics. Hold back the last half-inch if you want to avoid yeast and hop sediment, or swirl it in if the beer is a hazy style and you'd like the fuller texture. The strength and hop intensity call for food with enough fat, spice or char to stand up to it. Spicy dishes such as Thai green curry, buffalo wings or jerk chicken work because the sweetness and carbonation soften the heat, and the citrusy hop notes echo lime and herb. Charred burgers, smoked brisket and sharp aged cheddar suit the bitterness and resin. Carrot cake or a cream cheese frosting makes a reasonable dessert match, where the beer's fruitiness and mild sweetness meet the dessert's richness. Avoid delicate fish or light salads, which an imperial IPA will overwhelm.
