Description
Suyo Pisco Quebranta is a Peruvian pisco bottled at 40% ABV, made from Quebranta grapes. Quebranta is a non-aromatic variety, which sets it apart from the floral Italia or Torontel styles. Expect a grape-forward but restrained profile: clean fruit, a gentle earthy backbone, and a smooth, rounded texture rather than perfumed top notes. Pisco is an unaged grape brandy, so there is no VS, VSOP or XO designation here. The spirit is clear, and any character comes from the grape and distillation rather than oak. Because it is unaged, this bottle behaves differently from a cognac in a snifter. Neat sipping is possible, and a small pour in a tulip-shaped glass will show the fruit and earthy notes most clearly, but the spirit really shows its strength in mixing. The non-aromatic base gives bartenders a neutral-leaning canvas that supports citrus and bitters without competing with them, which is why it is the traditional choice for the Pisco Sour. Shake 2 oz of pisco with about 3/4 oz lime juice, 3/4 oz simple syrup and an egg white, then finish with a few drops of Angostura on the foam. For something longer and lighter, a chilcano is the simpler route: pour pisco over ice, top with ginger ale, add a squeeze of lime and a dash of bitters. Quebranta's earthiness holds up well against the ginger's spice. Classic brandy cocktails can also be built with it. Pisco works as a substitute in a Sidecar, where it will read drier and less caramelized than a cognac version, and it can stand in for brandy in a Sazerac-style drink if you want a lighter, grapier take. A Brandy Alexander is better left to aged cognac, since its cream and crème de cacao want the vanilla and oak that pisco lacks. For serving temperature, keep the bottle at room temperature if you plan to sip it neat, so the aromatics open up. For cocktails, chill it or shake it hard over ice, since dilution tempers the 40% strength. At the table, pisco pairs naturally with ceviche, grilled seafood, fried plantains and other bright, salty or acidic dishes.
