Description
Gamet's Droite Brut is a Champagne from France's Champagne region, made in the Brut style, which means dry, with only a small dosage of sugar added at disgorgement. The details supplied don't name the grape blend, vintage or time on lees, so what follows describes what Brut Champagne typically offers. Expect a pale gold colour with a fine, persistent mousse. On the nose, look for green apple, lemon zest and white orchard fruit, with the bready, brioche-like notes that come from autolysis during bottle fermentation. The palate is usually light to medium in body. Acidity is high and carries the wine, and the finish is crisp and dry. There is no tannin to speak of and little or no overt oak influence. Because the acidity is so firm, Brut Champagne works best with salty, fried or rich foods that it can cut through. Oysters, shellfish, smoked salmon and sushi are classic partners. Fried chicken, tempura, potato chips and buttery popcorn also work well, since the bubbles clear the palate between bites. Soft, creamy cheeses such as Brie or a young Comté suit it, as do simple egg dishes and roast chicken. For a spicier or sweeter menu, the dry style may read as austere. In that case, pair it with milder dishes. Serve the wine well chilled, at roughly 6 to 8°C (43 to 46°F). About three hours in the refrigerator, or 25 to 30 minutes in an ice-and-water bucket, will get it there. Colder serving mutes the aromas, and a wine that is too warm tends to foam and taste flabby. Decanting is not needed and is not recommended, since it would dissipate the carbonation. Pour gently down the side of the glass to keep the mousse intact. A tulip-shaped glass or an all-purpose white wine glass shows the aromatics better than a wide coupe, which lets the bubbles and aromas escape quickly. The narrow flute is acceptable, but it limits the nose. Non-vintage Brut Champagne is generally made to be enjoyed on release. This bottle is best opened within a year or two of purchase and does not need extended cellaring. Keep it lying on its side or upright in a cool, dark place away from temperature swings until you are ready to chill it.
