Description

Amarula is a cream liqueur made in Phalaborwa, in South Africa's Limpopo province, and bottled at 17% ABV. Its base is the fruit of the marula tree, blended with dairy cream. That combination sets the profile: sweet and rounded, with the fruit giving it a character that plain vanilla or chocolate cream liqueurs don't have. The reference notes describe caramel and toffee with a faint citrus edge. Expect the citrus to show up as a light lift at the finish, not as a bright acidic note, and expect the body to be velvety and fairly rich, as with most cream liqueurs. At 17% it is lower in alcohol than a lot of liqueurs, and the cream keeps the sweetness soft. That makes it easy to drink on its own. The simplest serve is over ice in a short rocks glass. The ice thins it slightly and tightens the sweetness, and the caramel-toffee notes stay in front. Served neat and lightly chilled, it is thicker and more dessert-like. A small pour in a snifter or cordial glass works well after a meal, and it is a natural partner for a plain cheesecake, a slice of pound cake, or something with salted caramel or dark chocolate, where the salt or bitterness balances the sugar. It also works as a coffee liqueur alternative. Stirred into hot coffee, it adds sweetness and cream in one step, so you can skip the sugar and milk. In iced coffee or over cold brew, a measure gives a drink that tastes like a toffee latte. As a cocktail ingredient, it can replace Irish cream in a Mudslide or a White Russian, where it brings a more caramel, fruit-leaning note. Shaken with ice and strained into a chilled coupe, it makes a simple dessert cocktail. For a creamy shot, layer it with coffee liqueur or a drop of espresso. Two practical points. Cream liqueurs don't mix well with a lot of acid, so keep it away from citrus-heavy cocktails, which can make the cream curdle. Once the bottle is open, store it somewhere cool and use it within a reasonable time, since dairy-based liqueurs keep better when they aren't left warm.
