Great Lakes Christmas Ale is a 7.5% ABV winter warmer brewed in Ohio and spiced with honey, cinnamon and fresh ginger. At 28 IBU, bitterness sits well back from the front. The hops act as a light structural backbone rather than a flavor driver, so the malt, honey and spice carry the profile. Expect a medium-to-full body, a deep amber to copper color, and a gently sweet, bready malt base. The ginger typically adds a peppery lift and the cinnamon a dry, woody warmth that lingers in the finish. The honey tends to read as rounded sweetness more than sugar, which helps keep the spice from feeling sharp. Beers at this strength usually give a slow, warming finish that suits cold-weather drinking. The spicing is where this beer departs from a standard malt-forward seasonal, so pair it with that in mind. Roast pork, glazed ham and roast turkey with stuffing all fit, because the ginger and cinnamon echo the sweet-savory seasonings those dishes already use. Sharp aged cheddar, gouda and nutty alpine cheeses hold up against the malt, while sweet potato casserole, roasted squash and caramelized root vegetables pick up the honey notes. For dessert, gingerbread, pumpkin pie, spice cake and apple crisp are natural matches. Very spicy or heavily acidic dishes tend to clash with the cinnamon and ginger, so they are better paired with something else.
