Azulejos Blanco Classic is an unaged tequila from Jalisco, Mexico, bottled at 40% ABV. The reference material describes it as made from 100% blue Weber agave, and the bottle is a hand-painted ceramic piece in the Talavera tradition. The profile to expect is clean, crisp agave, with citrus and a touch of light pepper. That is the typical shape of a blanco: cooked agave sweetness up front, a bright, slightly grassy edge, and a peppery lift on the finish. Without barrel contact, the spirit shows the plant and the distillation rather than wood. A blanco sits at the start of the tequila aging ladder. Reposado spends at least two months in oak, añejo at least a year, and extra añejo at least three years. Each step trades agave brightness for vanilla, caramel and baking-spice notes, and a smoother, rounder texture. A blanco skips all of that. If you want to taste how the agave itself came out of the cooking and fermentation, this is the style that shows it most directly, and it is usually the bottle you compare other expressions against. A Margarita made with fresh lime juice and a measure of orange liqueur lets the citrus and agave notes carry through, and a salted rim suits that bright, peppery character. A Paloma, which is tequila with grapefruit soda and a squeeze of lime, works well in a tall glass over ice, as does Ranch Water, built from tequila, lime and sparkling mineral water, where a crisp blanco keeps the drink dry and clean. Use a blanco when you want the agave to stay in the foreground rather than be covered by oak.
