Vegas Altas Ancestral

Ancestral by VEGAS ALTAS is an intriguing sparkling wine that hails from the sun-drenched vineyards of Extremadura, Spain. Crafted using the traditional ancestral method, this organic wine captures the pure essence of its native grapes, delivering a vivacious freshness that is both captivating and genuine. With an ABV of 11.5%, this wine presents a delicate balance, showcasing the natural flavors and aromas inherent to its terroir. Expect a lively effervescence that dances on the palate, complemented by bright, crisp acidity and a subtle minerality, typical of wines from this region. The ancestral method brings a unique complexity to the wine, with notes of fresh orchard fruits and a hint of citrus zest. Its light body and gentle tannins make for an inviting and refreshing experience, perfect for those who appreciate a wine that is both vibrant and unpretentious. Serve Ancestral well-chilled, ideally between 45-50°F, to fully appreciate its fresh character and energetic bubbles. While it does not require decanting, allowing the bottle to stand upright for a few minutes before opening will help settle any sediment, ensuring a clearer pour. Opt for a flute or tulip glass to concentrate the wine's aromas and enhance its sparkling nature. Ancestral's bright and lively profile makes it a versatile companion for a variety of dishes. Pair it with light appetizers such as fresh seafood, soft cheeses, or a crisp salad to complement its natural acidity. Its refreshing qualities also make it an excellent choice to enjoy with spicy cuisine, as it can temper heat and cleanse the palate. While this bottle is delightful when enjoyed now for its freshness, it also holds potential for short-term aging, allowing its flavors to further develop complexity over time.
