Cocchi Americano Bianco Aperitivo

Cocchi Americano Bianco is an aromatized wine from Piedmont, Italy, bottled at 16.5% ABV. It is a bitters-category aperitivo in the Italian tradition. Per the producer's own style, the base is a Moscato wine, flavored with gentian root, citrus peel and spices. Gentian supplies the bitter backbone, which is why this sits among the bitters rather than the sweet vermouths. Expect a pale straw color and a nose led by orange and grapefruit peel, with a floral Moscato lift underneath. On the palate, styles like this usually open with honeyed citrus and a light grape sweetness, then turn dry and bitter on the finish. The gentian bitterness is quinine-like and gentle, closer to a tonic water edge than the harder bite of an amaro. The sweetness is moderate rather than syrupy, so it reads as bittersweet and fresh. At this strength it is lighter than a spirit but fuller-bodied than a simple white wine. Straight service is the simplest route. Chill the bottle well, pour two to three ounces into a small wine glass or rocks glass, and add a twist of orange or lemon peel. Over a large ice cube works equally well if you want it to dilute slowly. For a longer drink, top one part Americano with two to three parts soda or tonic over ice, with a slice of grapefruit or orange. This makes a light, low-effort aperitivo spritz that suits the hour before dinner. Sparkling wine such as prosecco also works in place of soda. As a cocktail modifier, it is best known as the traditional Kina Lillet stand-in. The Vesper (gin, vodka and a measure of Americano) and the Corpse Reviver No. 2 (gin, orange liqueur, lemon juice, Americano and an absinthe rinse) both depend on its dry, quinine-edged bitterness. It also works in a White Negroni, where it replaces sweet vermouth alongside gin and a gentian liqueur, and in a 50/50 martini-style stir with dry gin. At the table, pair it with salted almonds, green olives, aged hard cheeses, prosciutto or other cured meats, which suit its bitterness and citrus.
