Description
St. Elizabeth Allspice Dram is a Jamaican rum-based liqueur bottled at 22.5% ABV, flavored with allspice, the berry known locally as pimento. That is why it also turns up under the name pimento dram. Allspice naturally reads like a blend of clove, cinnamon and nutmeg with a peppery edge, so expect a warm baking-spice character rather than a single dominant note. The reference profile for this bottling is rich but only lightly sweet, which sets it apart from heavier, syrupy spice liqueurs and makes it easier to use in measured amounts. Because the spice is concentrated and the sweetness restrained, the dram works best as a modifier, where a small pour adds depth to a drink built on something else. Its home territory is tiki and rum cocktails. The Jamaican rum-and-lime template is an easy starting point: a quarter-ounce to a half-ounce of dram added to a daiquiri-style sour brings in clove and nutmeg tones that suit aged or pot-still rum. It is also the traditional extra ingredient in the Barbados-style rum punch family, and a short measure can stand in for the grated nutmeg and bitters in a classic rum punch. In tiki builds such as a Test Pilot, a Jet Pilot or a Mai Tai variation, it fills the role of the spiced layer between the citrus and the rum. A half-ounce is enough to be noticeable without pushing the drink toward mulling spice, and a bartender can scale from there. It also fits outside the tiki canon. A teaspoon in an Old Fashioned made with aged rum or bourbon gives a gentle holiday-spice lift, and a small dose in a hot toddy or mulled cider adds depth without needing whole spices. In the kitchen, a spoonful works in pumpkin or sweet potato desserts, bread pudding, and poached pears. For sipping, serve it neat in a small cordial glass at cool room temperature, or over a single large cube if you want the spice softened by a little dilution. At this strength it is lighter than a spirit but still more assertive than a typical fruit liqueur, so a short pour of an ounce or two is plenty. To lengthen it, top an ounce with ginger beer or soda water and a squeeze of lime for a simple highball that keeps the spice in front. Once opened, keep the bottle tightly capped and out of direct sunlight, since the volatile spice oils fade over time.
