Description
Aguardiente Antioqueño Blue is the sugar-free version of Colombia's anise-flavored cane spirit, bottled by Sin Azucar in Antioquia and sold at 24% ABV. That strength is lower than most whiskies, rums and vodkas, and closer to a liqueur. It also explains why this style is poured in small measures and drunk without a mixer. Aguardiente is built on anise. Expect a clear spirit with a pronounced licorice and fennel-seed character that comes forward on the nose and carries through the palate. Without added sugar, the usual sweetness of the category is largely absent. Styles like this typically taste drier and cleaner than sweetened aguardientes, with a brisk, herbal finish and a light cooling edge from the anise. If you know ouzo, sambuca or arak, the flavor family is the same, but this is generally lighter in body and less syrupy. In Colombia, aguardiente is usually taken as a shot. Pour it neat into a small glass, such as a shot glass or a narrow cordial glass, and serve it well chilled. Keeping the bottle in the fridge or freezer mellows the anise and tames the alcohol. At 24% ABV it should not freeze solid in a home freezer, so it pours cold and slightly thickened. It is traditionally shared in rounds, often with a toast, alongside snacks and a long meal. It also works outside that tradition. Over ice with a squeeze of lime, or topped with soda water or tonic in a tall glass, it makes a light anise highball that suits the dry profile. As a cocktail modifier it can replace absinthe or pastis in a rinse for a Sazerac-style drink. You could also add a small measure to a mojito-style build with mint and lime, where the anise adds a savory herbal layer. Because it has no added sugar, any sweetness in a mixed drink will have to come from the other ingredients. For food, the dry anise profile suits salty and fried dishes. Empanadas, chicharrón, fried plantain, cured meats and aged cheeses are all reasonable matches, and the aguardiente cuts through the richness between bites.
