Description
Cantele's 2014 Salice Salentino is a distinguished expression of Puglia's winemaking tradition, crafted predominantly from the Negroamaro grape. This wine exhibits a deep, alluring hue that hints at the complexity found within each glass. Upon tasting, expect the robust character typical of this varietal, offering an intriguing balance of ripe dark fruits and earthy undertones. The palate enjoys a medium to full body, where firm tannins interact harmoniously with a lively acidity, providing a structured yet approachable sip. Best savored at a slightly cool temperature, around 16-18°C (60-64°F), this wine reveals its full potential when allowed to breathe for a short period before serving. Decanting for about 30 minutes can enhance its aromatic profile, allowing spicy notes and subtle hints of leather to complement its fruit-forward nature. Pour it into a large, rounded glass to fully appreciate the aromatic nuances and to let the wine's character evolve as you sip. Food pairings play a significant role in the enjoyment of Salice Salentino. Its depth and complexity make it a versatile companion to a range of dishes, from hearty Italian classics like osso buco or eggplant parmigiana to grilled meats and aged cheeses. The wine’s acidity and tannins cut through the richness of these foods, enhancing each bite and sip. While this 2014 vintage is delightful now, those with patience will find it rewarding as it continues to develop subtly over the next few years. Its ability to mature in the bottle suggests a potential for those who enjoy letting wines reveal new dimensions over time. Whether shared at a convivial gathering or enjoyed quietly, this wine offers a genuine taste of southern Italy's viticultural prowess.

Was expecting something heavier but actually super smooth. Nice surprise from Puglia, will get again for sure.

Came across this one at a little spot in Boston last year, finally found it here. Brought a bottle to Sunday dinner and it worked great with grandma's pasta. Still wish the bottle was just a bit bigger.

Glad you tracked down the Cantele! Next time you want something similar for pasta night, ask about the Primitivo. - Tom
