Single malt Irish whiskey is made from malted barley at a single distillery. Single grain is also made at one distillery but uses other grains alongside or instead of malted barley, and it tends to taste lighter. Both are aged in wood, and an age statement such as 12 year tells you the youngest whiskey in the bottle.
