What is port wine, exactly?

Port is a fortified wine that traditionally comes from the Douro Valley in Portugal. During fermentation, a neutral grape spirit is added. That stops the yeast before all the sugar is turned to alcohol, which is why port tastes sweet and sits higher in alcohol than a regular table wine.

Most port is red, though white and rosé versions exist. The style you buy depends mostly on how the wine was aged, and that changes the color, the flavor and how you serve it.

Which style of port should I buy?

Ruby port is the simplest and most affordable style. It is aged briefly in large vessels, so it stays deep red and tastes of fresh red and black fruit. It is a good first bottle.

Tawny port is aged longer in smaller wooden barrels. It turns amber-brown and picks up flavors of nuts, caramel and dried fruit. Labels often carry an age such as 10 or 20 years, which is an average of the wines blended in.

Vintage port is made from a single declared year, bottled young and aged in the bottle. It is rich and structured, and it throws sediment, so it needs decanting. Late bottled vintage sits between ruby and vintage in style and is usually ready to drink on release.

White port is made from white grapes and is often served chilled, sometimes mixed with tonic.

How do you serve port?

Serve port in a small glass, a pour of around two to three ounces is traditional. Ruby and vintage port are usually served at cool room temperature. Tawny is often nicer slightly cooler, and many people chill it lightly.

Vintage port should be stood upright for a day, then decanted slowly to leave the sediment behind. Ruby and tawny do not need decanting.

After opening, ruby and tawny keep for a few weeks if you reseal the bottle and store it in a cool place. Vintage port fades faster, so plan to finish it within a few days.

What food goes with port?

Ruby port suits dark chocolate and berry desserts. Tawny goes well with nut tarts, caramel desserts and crème brûlée. Both pair with blue cheese, and the salt and sweet contrast is a classic.

A small cheese board is an easy way to serve port at a dinner. Add walnuts, dried figs and a few squares of dark chocolate and you have dessert without any baking.

For a New England evening by the fire, a glass of tawny on its own is plenty.

Can I use port in cooking or cocktails?

Yes. Ruby port is used in reduction sauces for beef and duck, and in poached pears. You do not need a vintage bottle for cooking, a basic ruby works.

In cocktails, port adds sweetness and depth to drinks built on whiskey or brandy. If you are making drinks at home, look at our bourbon, whiskey and mixers too.

White port with tonic and a slice of orange is a simple long drink for warm days.

Port is most often red, but it is a fortified wine. White and rosé ports also exist.

Is port sweet?
