Bitterness in New England IPAs usually stays restrained, so the hops read as ripe mango, pineapple, or grapefruit pith more than resin or pine, and the finish tends to be soft with little dryness. Because the hop oils are the point of the style, freshness matters more here than with almost any other beer. Hop aromatics fade within weeks, so check the packaging date, keep the can cold, and drink it sooner rather than later. A standard pint glass works fine if that's what you have. At the table, the juicy hop profile and light bitterness suit foods with spice, fat, or char. Fish tacos with lime, Thai green curry, jerk chicken, and grilled shrimp all play well with tropical hop flavors, while a burger with sharp cheddar or a creamy brie-style cheese gives the beer's soft body something to cut through. Because the bitterness is moderate, it also sits comfortably next to sweeter dishes like mango salsa or a carrot cake without turning harsh.
