Cooper Thief Cabernet Sauvignon

Cooper Thief's Cabernet Sauvignon from California is a bold testament to innovative winemaking, marrying tradition with a modern twist through its unique aging in bourbon barrels. This distinctive process bestows the wine with a rich, full-bodied character that is both intriguing and pleasurable. Expect luscious notes of dark fruit—think ripe blackberries and plums—that mingle harmoniously with subtle undertones of caramel and vanilla, a nod to its bourbon-barrel origins. The wine's high ABV of 16.0% is balanced by a smooth finish that lingers pleasantly, leaving a warm impression. When it comes to serving, this Cabernet Sauvignon shines at a temperature between 60°F and 65°F, allowing its complex flavors to fully develop. Although decanting isn't strictly necessary, doing so can enhance the aromatic profile, particularly emphasizing the bourbon-influenced notes. For an optimal experience, serve this wine in a large, wide-bowled glass that encourages aeration, allowing the enticing scents and flavors to unfold with grace. Pair this robust wine with hearty dishes to complement its intensity. Grilled meats, particularly a juicy ribeye steak, will resonate beautifully with its bold profile. Additionally, roasted vegetables or aged cheeses, like Gouda or cheddar, make excellent companions, accentuating the wine's nuanced caramel and vanilla hints. While this Cabernet Sauvignon is crafted to be enjoyed now, its structure suggests it will also age gracefully over the next few years, developing further depth and sophistication.
