Spyglass Borealis

Borealis by Spyglass is an Imperial IPA that brings the energetic spirit of New Hampshire directly to your glass. With an ABV of 6.5% and an IBU of 50, this beer strikes a balanced harmony between strength and drinkability. Expect a lively interplay of hops and malt, typical of this style, where the bitterness is present but doesn't overshadow the more nuanced flavors lurking beneath the surface. A subtle hint of citrus zest cuts through, adding a refreshing touch that evokes the crispness of a northern landscape. When it comes to serving Borealis, the right approach enhances its natural character. This IPA is best enjoyed at a slightly chilled temperature, around 45-50°F, ensuring that its flavors are both clear and complex without being muted by excessive cold. A tulip glass is the ideal vessel, designed to capture the aromatic richness while allowing the beer's head to develop and retain its form. This glassware also provides the perfect stage for the beer's vibrant color to be fully appreciated. Pairing Borealis with food can elevate any meal to new heights. The beer's zesty and hoppy notes make it a fitting companion for spicy dishes, such as Thai curry or buffalo wings, where its bitterness can cut through the heat and refresh the palate. Alternatively, try it alongside grilled meats or sharp cheeses, where it can complement and contrast the robust flavors, creating a dining experience that's as lively as the beer itself. Whether you're exploring new pairings or enjoying a classic IPA moment, Borealis offers a taste of New Hampshire's spirited brewing tradition.
